Ingredients:
- 12 ounces spaghetti
- 2 avocados
- 1/2 cup basil
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1/3 cup MIRA Extra Virgin Avocado
- Oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
Instructions:
- Cook the spaghetti according to package instructions.
- In a food processor, combine the avocados, garlic, lemon juice, basil, salt, and pepper. With the motor running, slowly add the avocado oil.
- Blend until smooth.
- Toss the cooked spaghetti with the avocado sauce, cherry tomatoes, and corn. Serve immediately.
